How to get your 10 per day! Minestrone Soup

So we are now being advised to eat 10 pieces of fruit and veg throughout the day. Seems like a lot so why not try this soup, it contains 9 of your 10! I’m a big fan of soup, not only is it healthy, I make a massive pot on a Monday and it will feed us for a couple of nights.

So Mondays soup is Minestrone. Filled with vegetables, pasta and beans you can make this with a few bits of ham or lardons, or keep it veggie.

1 Carrot
1 Leek
2 Celery sticks
Half an Onion
Half a Pepper
Handful of Green Beans
Half a head of Broccoli
1 Can of Barlotti Beans
1 Can of Flageolet Beans
1 Bottle of Passata
1 Pint of stock either veg or meat. (Homemade is best but cubes can be used).
2 Garlic cloves
5 Table spoons of Orzo (I bought mine in Waitrose, it’s an Italian pasta but very small).

Dice the carrot, celery, garlic and onion then fry gently in a little olive oil.

Once the veg is softening add the stock, beans & passata.

Bring to boil, then turn down and simmer for leave for 1 hour.

Season before serving, I serve mine with a few shavings of Parmesan and some fresh basil.
