Sweet Potato Shepherds Pie.
350g Lean Minced Beef
1/2 Onion diced
1 Carrot diced
1 Pint of stock
3 Sweet Potatoes
Butter & Milk to mash
Sautee the diced veg until soft and then add the minced beef.
When the meat is starting to turn brown, add your stock to the pan and allow to simmer gently for 10 minutes.
Season the mix well and then transfer to a deep dish.
Chop the sweet potatoes and boil in salted water until soft.
Mash until fluffy adding the knob butter and a splash of milk. Season well before placing upon your beef mix.
Using a fork fluff up the top of the pie this will catch some colour when it’s baking.
I served with Brocoli and Petit Pois.
