Roast Beef is a must on National Yorkshire Pudding Day!

When is comes to Sunday Roast I’m fussy to say the least. If I go out there is only 1 pub I’ll go to and if it’s a homemade roast then the pressure is on.
This week after a Saturday stroll to Borough Market to pick up a beautiful piece of Beef from the Ginger Pig.
I was wishing the weekend away for Sunday to come around.
This piece was approximately 1.5kg and to prep rub the meat with oil, salt & pepper.
To Cook
In a hot frying pan seal the meat on all sides including the edge. I threw in a little Rosemary and a crushed garlic bulb to add flavour.
In an oven heated to 225 I placed the meat on the top shelf for 20 minutes. I then moved to the bottom of the oven for further 20 minutes. In hindsight I think maybe 10-15minutes would have been sufficient but as you can see the meat was pink, juicy and very tender.
Make sure you let the meat rest by wrapping in foil for at least 20 minutes.

So on to the Yorkies….
Now I’m not going to lie I have on occasion been known to use Aunt Bessie’s frozen Yorkshire’s… I know I can hear the intake of breath from Big Al but time and convenience is sometimes a factor.
I haven’t made Yorkshire Puddings since living in the North but yesterday I felt it would be detrimental to the meat if I didn’t at least attempt to make my own.
100ml Plain Flour
2 eggs
100ml Milk
I mixed the batter on Saturday and left in the fridge overnight. Then in my pudding tin I melted a little beef dripping and heated until smoking. Well here’s the first attempt.
Let’s just say I don’t think I’ll be feeding them to the ducks…
So slightly frustrated and not wanting to have to resort to AB’s I added a little more milk and tried again. I’m happy to say they weren’t as bad but I think now I’ve bought the pudding tin I will be practising more.
So with real Yorkies, roast spuds, carrots, broccoli & savoy cabbage here is the Roast dinner. Was it worth all the effort??? Definitely!
