Follow this quick & simple recipe for vegan brownies for when you fancy a decadent treat!
You will need:
125g self raising flour
185g pure unsweetened cocoa
100g caster sugar
120ml soya milk (+ extra 4tbsp soya milk)
2 tbsp vegetable oil
60g vegan friendly margarine
160g brown sugar
1 tbsp vanilla
optional vegan choc chips
Cup of apple sauce or a banana
Preheat oven to 170.
Grease/line an 8inch square cake tin
add margarine, brown sugar, 60g of cocoa powder and 4 tablespoons of soy milk into a saucepan and bring to a simmer, stirring well.
Once fully incorporated, remove from heat and cool. Once cool, beat in vanilla essence.
In a seperate bowl, make the batter. Mix flour with remaining 125g of cocoa and (optional) chocolate chips.
Mix in apple sauce or banana, 120ml soya milk and oil.
Place batter into cake tin and spread evenly (it will be quite stiff)
Pour the topping (from the first bowl) carefully over the top and spread evenly.
Bake for around 30 minutes until set. You’ll know it’s cooked if you insert a knife and it comes out clean.
