The secret ingredient in this divinely moist chocolate cake may raise a few eyebrows! But give beetroot a chance – it gives chocolate cake a moistness like no other, along with a hint of earthiness that everyone will approve of. You will need:
- 200g good quality dark chocolate (70% solids)
- 125ml vegetable oil
- 350g sugar
- 225g self raising flour
- 85g cocoa powder
- 1.5tsp bicarbonate soda
- 2 eggs
- 250ml beetroot juice
- 250 grated beetroot
Preheat oven to 170° (gas mark 3)
Combine the chocolate, vegetable oil and sugar in a bowl. Melt over a bain-marie.
While the chocolate is melting, add the flour, cocoa powder & bicarbocate soda into a seperate bowl and combine.
Take the melted chocolate off the heat and slowly begin to add the flour mix into the chocoloate bowl, mixing thoroughly. Allow to cool.
When the mixture is cool, crack in the eggs, and pour beetroot juice and grated beetroot.
Mix well and pour into a cake tin.
Bake for 35 minutes and enjoy!
