Broccoli Salad with Cashew & Chilli

3 x heads of broccoli (please don’t use frozen)

100g x cashew nuts

2 x chilli’s

2 x red onions (thinly sliced)

25ml x sesame oil

50ml x light soy sauce

Prep broccoli in to small florets and bar boil until your knife just abouts to go through, takes anywhere between 4 & 5 minutes. Refresh in to cold water.

Dry toast your cashews in a dry frying pan until golden and leave too cool.

Finely slice you red onions and your chilli.

In a small bowl whisk together your soy & sesame oil with a touch of black pepper.

In a larger bowl add all ingredients together and with your fingers mix well.

Serve on large dish for best presentation.
