This is a lovely hearty salad with great flavour and doesn’t take a huge amount of prep.
The ingredients I used made 2 decent sized salads.
4 bulbs of beetroot chopped into quarters and roasted at 200 for 30 minutes.
150g goat’s cheese sliced and crumbled.
Tomatoes, I used a few yellow cherry and a standard red.
Toasted pine nuts.
3 chopped spring onion.
½ bag of lamb’s lettuce.
Crispy bacon pieces.
While the beetroot is roasting firstly roast the pine nuts in a dry frying pan until brown. Then you can crisp your bacon in the same pan. Once you have everything prepped then assemble. As easy as that.
I dressed the salad with a sprinkling of good virgin olive oil and the same with balsamic.
