Ingredients for 4 person:
200g Pearled Organic Spelt
200g Butternut Squash(peeled and diced 1cm cube )
100g Red Peppers
100 Garden Peas
50g Savoy Cabbage
4 tbsp. Vegetables Oil
1 L Vegetable Stock
2 Garlic Gloves (diced
100ml White Wine
1 tbsp. Fresh Chopped Sage
13 Parmesan Cheese
1 tbsp. Chopped Parsley
1 tsp. Chia seeds
Salt , Black Pepper
1.Put the butternut squash on a baking tray, drizzle with 1 tablespoon of the oil and season with salt and pepper. Bake in the oven for 15 minutes until cooked.
2.Heat the remaining tablespoon of oil in a deep pan over a medium heat, then add the onion and garlic and cook for 5 minutes add the spelt grains and stir .
3.Pour in the wine and then add vegetables stock and stir until it is fully absorbed by the spelt. Continue to add the stock, ladleful by ladleful, stirring the spelt to absorb the stock after each addition.
4. About 20 minutes into the spelt cooking time, add the butternut squash ,sage, red peppers, seasoning with salt and black peppers .
5.Cook about 5 min than add green peas, savoy cabbage and butter .
6.Served with shaved Parmesan and sprinkled with Chia seeds
