 Black Bean-Quinoa  Veggie  Burgers with Avocado and Tarragon Mayonnaise

Here’s a delicious veggie burger .This burger can be an alternative instead of meat version ,some fresh vegetables,dips and of course  nice whole-grain burgers buns  . Easy and delicious:)
                                           
Ingredients (for make) for 6-8 person
150g black quinoa
2 red onions, finely chopped
100g sun-dried tomato and finely  chopped
450g cooked black beans
100g  red peppers ,finely chopped
2 cloves garlic
1 red chilli
salt ,black pepper ,oil
Avocado and Tarragon Mayo.
150ml  mayonnaise
1 avocado
1 tsp finely chopped Tarragon
1/2 juice of one lemon
salt,black pepper
To serve
green leaves salad
grated carrots
8 whole -grain burgers buns

1. Cook quinoa in  small saucepan, and season with salt. Bring to a boil. Cover, reduce heat to medium-low, and simmer 20 minutes, or until all liquid is absorbed.

2. Fry red onion and red peppers ,garlic ,chilli and sun-dried tomatoes. Cook 3 to 4 minutes.

3. Transfer bean-onion mixture to food processor,  cooked quinoa, and process until smooth.

4. Preheat oven to 20oC . Shape bean mixture into 8 patties (140g), and place on  baking tray with baking parchment . Bake 20 minutes, or until patties are crisp and brown .

5.Mix mayonnaise with mashed avocado,tarragon lemon juice and season with salt and black peppers

6 Serve on buns with green leaves ,carrots and avocado tarragon mayonnaise.
