Spring Roll with Smoked Tofu , Chile & Lime peanuts

“A great , easy dish to create at home to showcase sum of the best flavors of Thailand. Kaffir lime is a citric fruit native to Asia, India, Nepal, Bangladesh, Thailand , Indonesia, Malaysia and the Philippines.”

The leaves are the most commonly used part of the plant which can be fresh, dried or frozen and can be found at any good health & whole food shop. As I gained more and more of a love for Thai food and infusion of flavors they create I found kaffir leaf popping up on numerous recipes for dishes such as Tom Yum, Thai Green & Red Curry. One of my personal favorite ways to use it is in a Kap Klaem (drinking snack) of Chili & Kaffir lime tossed with peanuts. served all over Thailand usually served with dry fish mixed through it. In this recipe we have adapted the Kap Klaem to be served as a garnish.

Spring Rolls Ingredients


3 Cloves Garlic , Minced

1  Thumb size piece of Ginger , Grated

1 Medium Bunch of Spring Onion, Fine Sliced

2 Carrots, Grated.

5-8 Shiitake mushrooms, Sliced

1/2 Cabbage, shredded or  Finely Chopped

1/2 Bunch of Corriander

150ml Soy Sauce

2 Tablespoon Miso

150g Bean Sprouts

150g Mangout

50g Sesame Seed

Peanut oil

3 Tbsp Caster Sugar

4 sheets of Filo Pastry

1 Red chilli (Add more if you enjoy it spicy)


  1. Place the carrot, cabbage, bean sprouts, mangout, chilli, Spring onion, garlic, shiitake mushrooms with a small amount of peanut oil and fry on medium heat for couple minutes till softened.
  2. Mix the miso , caster sugar, coriander and soy sauce sesame seed in mixing bowl . Once mixed add to vegetables and continue to fry till liquor has been absorbed into the veg this should take 5-8 minutes.
  3. Season and place the mixture in fridge to cool.
  4. Once mix is cool enough wrap in filo pastry and place back into the fridge for 30 minutes.
  5. Shallow fry the spring rolls in oil till golden brown all over. Then place in a 180°C preheated oven for 5 minutes.
  6. .Ready to serve.

Chilli & Kaffir Peanuts Ingredients

200g Raw Peanuts

100ml Peanut oil18 Kaffir Lime Leaves (Rough Chopped)

1 Lime (Grated & Juiced)

1 Tsp Chilli Flakes

1 Tsp Ground Ginger

Pinch of Sea Salt


  1. Heat up the peanut oil in a frying pan till red hot . Once hot enough add the peanuts and colour slightly.
  2. Once evenly colored add kaffir leaf, lime juice + zest, chilli flakes, ground ginger , salt and continue to cook for 2-3 minutes till oil is released from the kaffir leaf this will create a beautiful aroma in your kitchen, similar to the ones which  fill the streets of Thailand.
  3. Ready to serve or place in a dry sealed container . If container is sealed they will last up to a week in your cupboard.
