Super food salad rolls with beef

IMG_0386.JPGI was inspired to make this watching a Jamie Oliver programme. Not a great deal of cooking involved other than searing the beef which took 4 minutes each side and then browning the cashew nuts.

The rest of the ingredients are raw making this a super food supper. I used the following:

Fresh sprouts & cress

Sliced cucumber

courgettes chopped into batons

2 spring onions chopped

vermicelli noodles, soak in hot water for 10 minutes then drain. These actually work much better when left to go cold.

Chinese lettuce leaves to use as the wrap.


For the dressing in a bowl mix together these ingredients but you must remember to taste in order to get the correct consistency of sweet, sour & salty.

Sesame oil

Soy sauce

Lime juice

1 garlic clove chopped finely

2 birds eye green chilli’s

handful of fresh coriander leaves

Fish sauce


Place a selection of the ingredients in the centre of the lettuce leaf roll and eat. A nice touch is to put some of the dressing into individual bowls so you can dip each roll as you eat.
