Spiced Buttermilk Chicken, Mustard Mayonnaise

Spiced Buttermilk Chicken

1 tsp of onion powder

1 tbsp of garlic powder

½ tsp of cayenne pepper

½ tsp of Chilli powder

½ tsp of Smoked paprika

1 tsp of black pepper

2 tsp of celery seeds

1 tsp of salt

400g of seasoned plain flour

1 Chicken breast diced about 1 inch is ideal

100ml of buttermilk

Mustard mayonnaise

70ml of mayonnaise

1 tbsp of whole grain mustard

1 tsp of English mustard




Toast the onion powder, garlic powder, cayenne pepper, smoked paprika, chilli powder, celery seeds and pepper in a dry pan and grind in a mortar and pestle.

Take 50% of the spice mix and add into the buttermilk, lob in the chicken and allow to marinade in the fridge overnight.

Take the remaining spice and add into flour, remove your chicken from the buttermilk and toss the chicken in the spiced, seasoned flour.

Now take your mustards and mix with the mayonnaise and season, keep in the fridge until ready to serve.

Take your chicken and cook in the fryer at 175oc until golden. Tip onto a tray with paper, allow to rest for a minute.

Ensure the chicken is fully cooked before serving with your Mustard mayonnaise and I’ve added some rock chives and cress for a bit of colour.
