Courgette & Halloumi Skewers with  Rockets Salad and Tomato Salsa

 Ingredients for skewers:

Halloumi cheese 250g cube

Mint chopped 1 tsp

 zest and juice 1 lemon

2 tbsp extra-virgin olive oil

2 courgettes cut into 1cm rounds

1 fresh red chilli

Ingredients for tomato salsa:

 4 medium tomatoes, peeled and finely chopped

– 1/2 medium red onion, very finely chopped

1 small garlic clove, crushed

Small splash of white wine vinegar

Squeeze of lime juice

Handful of fresh coriander, roughly chopped

Salt and pepper to taste

Ingredients for rockets and cherry tomato feta salad:

200g rockets

100g cherry tomato

50 g feta cheese for seasoning

2 tbsp extra-virgin olive oil


1.Mix the chilli, half the mint, lemon zest and juice, oil, courgettes and halloumi. Leave to marinate for 30 mins. Soak 8 wooden skewers for 20 mins.

2.Thread the courgettes and halloumi onto the skewers. Cook on the BBQ, or under a grill, for 7-8 mins, turning halfway through and basting with the remaining marinade. Scatter over remaining mint.

3. Tomato, red onion, garlic ,lime juice,coriander,white wine vinegar  in a medium bowl, stirr it in. Then refrigerate until neede to serve.

4.Mix rockets, cherry tomato , feta cheese and  extra-virgin olive oil
