Stuffed Cabbage Rolls with Beef and Rice served with Tomato Basil sauce

                                                               

 

Last Thursday I made this dish for lunch at ETC DEXTER HOUSE. Our clients were very happy and asked me to post this up for them to attempt to replicate at home.

Ingredients for stuffed cabbage servings  8person
200g white long grain rice (or cooked rice 400 g)
2 onions
50ml  vegetables oil
600 g beef mince
1 large white cabbage (good if you can get a green one)
1 teaspoon  finely chopped garlic
1 teaspoon finely chopped parsley and thyme
salt, black pepper
200 ml beef stock
 
Ingredients for basil tomato sauce 
1 onion
2 table spoons oilve oil
half teaspoon finely garlic
100g  chopped celery
50g tomato puree
200g  fresh red   tomatoes  or 200g chopped tomatoes from can
100ml vegeatables stock
few basil leaves
1 teaspoon baslamic viniger
salt, black pepper, sugar
 
Preparation:
 
 
1.Remove hard core from the cabbage. Place whole head in a large pot filled with boiling, salted water . Cover and cook 3 minutes or until softened enough to pull off individual leaves. You will need about 16leaves.

cabbage in sauce pan(1) 2.When leaves are cool enough to handle, use a small knife  to cut away the thick center stem from each leaf, without cutting all the way
through.
4 .Cook rice in water(400 ml  water)
 
3. Fry the chopped onion in oil in a large frying pan until tender and let it cool,  next add   beef, rice, garlic, thyme, parsley, salt and black pepper.

4.Place about 150g  mix of meat on each cabbage leaf. Roll away from you to encase the meat. Flip the right side of the leaf to the middle, then flip the left side. You will have something that looks like an envelope. Once again, roll away from you to create a neat little roll.

5.Place the cabbage rolls on dish and seasoning each layer with salt and pepper. Pour beef stock over rolls, cover and place in oven. Bake for 1 hour,160°C

6. Served with Basil Tomato sauce.
 
Method: Heat the olive oil  in a pan, add the garlic, then gently fry for 1 min. Add the other ingredients, except the basil, then bring to the boil.Reduce the heat, then simmer uncovered for 5 mins, stirring occasionally.To finish, add the basil leaves, then stir into the sauce.
