Skinny Blueberry and Banana Muffins
300g x Self-raising flour
10g x Canderel or some other powered sweetener
2 x Egg whites
1 x tub of buttermilk (it’s about 284ml)
4 tbsp x Olive oil
150g x Blueberries
2 x Bananas
50g x Oats
1 x tsp x Bicarbonate of soda
Pre-heat your oven at 160c.
In one bowl add your flour, bicarb, sweetener, blueberries and ¾ of the oats.
In a separate bowl smash down your banana’s until nearly a puree. Add the egg whites, buttermilk and the oil. Mix well.
Mix all the ingredients together. Don’t worry about any lumps and some unmixed flour as you want it to be quite rustic and not like a cake batter.
Spoon your mixture in to a lined muffin tin.
Top with the remaining oats and bake in the oven for 20 minutes.
Leave to cool and enjoy (guilt free)
