using a leek without any wastage

Just thought I would show you what you can get out of a leak without any wastage ,

First of all I cut the top edge and bottom edge and discard, then the dark green bit wash and put in plastic for another day which I attend to use for a stock or trivit,

Next the lower dark piece i washed and  cut into thin strips which a chef normally calls Julienne which I deep-fried and added to  my juliene of aubergine skin and deep fried and mixed together

Then the lower part I washed diced   and I made a leak and aubergine caviar salsa but you could use it for a risotto, soup etc
