Scallops are my favourite of all seafood, when prepared and cooked properly there is simply nothing better. These are hand dived Scottish scallops, they have become so expensive in recent years due to over fishing but the hand dived variety are hard work for the divers and are sometimes difficult to find in choppy weather. These large hand dived scallops were about £3.50 each, if you can afford them, buy them. The scallop meat in tubs are simply no match for these beauties.
To get the best from your scallops it’s best to know how to prepare them, some people cook the little Orange corals or simply dry them under lights and blitz into a power to finish fish dishes but for this demonstration I’m just keeping the white scallop meat.
