simple Cinnamon, orange and clove panacotta

35 fll oz whipping cream

35fl oz milk

6 oz sugar

6.5 leaves gelatine, vegetarian gelatine can be used if you wish

vanilla pod cut in half, seeds and outer shell used

Zest of 2 oranges

cinnamon stick

2-3 cloves

place all ingredients except gelatine in a sauce pan

bring to a gentle simmer so all the flavours infuse, the take off heat

soak the gelatine leaves in water till soft, add to the hot milk mixture

strain the mixture through a sieve and pour into glasses

can be served with a compote or even a fruit puree

i have done some candied orange peel
