As the Indian summer continues here at the new venue of Monument we are keeping the salads at the forefront of our offering. Try these at home most are pretty self-explanatory but I have included some recipes. Colourful and bursting with flavour these salads are substantial enough to eat on their own.
To make the red pesto whizz together in a blender the following:
Roasted red peppers
Roasted pine nuts
Olive oil & garlic.
Season to taste.
