Late summer salads

As the Indian summer continues here at the new venue of Monument we are keeping the salads at the forefront of our offering. Try these at home most are pretty self-explanatory but I have included some recipes. Colourful and bursting with flavour these salads are substantial enough to eat on their own.

Tomatoes, avocado, crispy basil bread and pine nuts with a sprinkling of parmesan

Roasted Mixed Peppers with Red Pesto and Spinach

To make the red pesto whizz together in a blender the following:
Roasted red peppers
Parmesan
Roasted pine nuts
Basil
Olive oil & garlic.
Season to taste.

This salad was inspired by a trip to Ottolenghi and purchasing his cook book.
