Campfire muffins

Bank holiday was a time for camping this year. My boy is at an age where he needs to get out and about and release that built up Energy. We didnt want to travel too far from home this year so we booked up for 3 nights at embers Bentley campsite in Sussex.
Just 1 hr from home and it was a good test to see if he would last.

A great family friendly campsite with no cars onsite so it was ideal for kids to run around and have fun in a safe environment.

Our own designated pit fire, allocated pitch area and clean, hygienic and replenished shower and wash areas was a real plus and what I found useful was that everyone had access to a little pulley truck, very handy for picking up Logs or simply taking the washing up to get washed!

There was plenty to do with the Bentley car museum next door, food and medieval festivals in full swing.

The seaside wasn’t far away and we had bundles of fun down at seven sisters, walking, swimming and a touch of rock pooling. We caught everything from crabs to decent size shrimp but unfortunately Fabian made me return them to the pools as I wanted to turn them into surf and turf on the campfire.

We had oregano and garlic steak with homegrown chard, potatoes and tomatoes but the star of the show were the blueberry muffins!

The mix can be made the day before, refrigerated and used when required!

1 egg
125ml milk
4 tablespoons vegetable oil
200g self raising flour
110g caster sugar
1 teaspoons baking powder
1/2 teaspoon salt

Beat egg with a whisk. Then stir in milk and oil. Sieve the flour into a large bowl. Add sugar, baking powder and salt. Add egg mixture to flour and stir until flour is moistened. Batter should be lumpy and do not be tempted to over mix!

Cut about 6 oranges in half, scoop out the flesh and set aside, I squeezed these later to make Buck’s Fizz!

Now take half of an orange, fill 2/3 with muffin mix and a few blueberries for flavour. Pop on the second half of the orange and wrap with foil.

Pop into a golden fire, no flames and cook for 5 minutes, turn over and cook for 5 minutes more and hey presto, some delicious campfire muffins!
