BBQ Salmon

With all this warm weather and lots of BBQ’s it was a lovely change and treat to have this wonderful Salmon to BBQ. This is a simple way to cook the fish and it’s size shouldn’t put you off. This Salmon weighed 2.8kg and to prepare it all I did was seasoned both the inside and the outside of the fish and then stuffed it with 1 packet of fresh parsley, 1 packet of fresh dill. Then with slices of lemon I placed them both inside and on the top of the fish. The trick now is to wrap the fish in the foil and make it air tight. I used a couple of sheet of foil for this.
Place on the BBQ and cook for 30 minutes. Remove the fish and without opening the foil leave the fish to rest in its own steam and juices.

    Looks wicked lady B, I did this with trout last week but a little different, yours looks fab!
