This is a nice healthy roasted salmon dish using spring asparagus which as my title says is nearly a nicoise.
1 peice of salmon fillet. Ask in the supermarket for the ready to roast bag where they add a knob of flavoured butter and a lemon slice. I roasted the salmon in the bag at 200 for 8 minutes and then I rested it for 10 minutes.
The apsargus has been lightly steamed along with half a bag of spinach. I made a dressing of olive oil, lemon juice, chopped capers and a couple of chopped radish. Top off with a boiled egg!
