I found a piece of tuna steak in the back of the freezer that needed to be used. So prepare for tuna 2 ways. This evening I will be cooking off and dining on my Mexican Tuna Burgers with a sweet chilli and corn salsa. Recipe will be posted tomorrow.
While I was making the burgers I realised that I still had enough tuna for a couple of thin steaks which I marinated for an hour in a little olive oil, seasoning and a squeeze of fresh lemon juice. The steaks took minutes to cook in a frying pan literally 2 minutes each side and then leave to rest covered for a couple of minutes.
I then served them on a Nicoise salad or sorts. Salad leaves, soft-boiled egg, olives, tomatoes and onion. Delicious, healthy and easy to make.
