baked vanilla cheesecake

1 pack of digestive biscuits

25g melted butter

225g caster sugar

3tbsp corn flour

675g full fat soft cheese

2 eggs

1 vanilla pod (cut down the length and scrape all seeds out)

300ml cream

line and grease a 10 inch cake tin,

Put your biscuits into a food processor and whizz to form crumbs

add the melted butter to the biscuit crumbs and combine

place biscuit crumbs into cake tin and evenly press down to form a base in your tin

In a mixing bowl, place all of the above ingrediants and mix till smooth,

spoon out into cake tin and make sure its spread evenly

bake at 160 for 30 mins or untill set and lightly brown

cool and refridgerate over night

Tips- keep vanilla pod  outer shell and place in sugar which will create a lovely vanilla sugar that you can use for something else ,

you could serve it  with berry compote and chantilly cream
