Salmon topped with Red Onion Sauté Potato & Dill Creme Fraîche

Hi guys, it’s been a while! Thought I’d come back with one of my favourite salmon recipes for you all..

Taking one salmon fillet per person and multiply this recipe.

Boil one jersey royal potato per salmon, cool & slice into three.
In a bowl put two & a half dessert spoons of creme fraîche add a teaspoon of fleshly chopped dill, 1/4 of a sliced red onion, a squeeze of 1/8 lemon juice & a sprinkle of sea salt (not maldon) & the same of cracked black pepper.
Mix away!

Place salmon into a roasting tin (with high sides) place your sliced potato on top of the salmon. Carefully spoon creme mix on top of your potato. Cover with foil & bake for around 10-15 mins at 180°c

Serve with a medley of shredded leek & purple sprouting broccoli.

    It certainly has been a while Chef Shane! Welcome back. The Salmon looks delicious and is my favourite fish.
