Baked Peaches with Ginger Biscuits & Masarpone

Roasted PeachesIts the perfect time of year for peaches and nectarines and this is a perfect way to use them for a light fruity summer pudding.

  • 50g/2oz butter
  • Ginger biscuits, crushed
  • 2 tbsp honey, plus extra for drizzling
  • 4 peaches, halved and stones removed
  • demerara sugar, to sprinkle

Preparation method

  1. Preheat the oven to 180C/350F/Gas      4.
  2. Melt the butter in a saucepan, but do not let it brown.
  3. Mix together the crushed ginger biscuits, the melted butter and honey. Place a heaped teaspoon of the      mixture onto the flat side of each of the peach halves and place on a baking tray.
  4. Sprinkle with demerara sugar and drizzle with more honey.
  5. Bake in the oven for 15-30 minutes until golden. Serve.
