Caramel Amaretti Ice Cream

IceCreamYields 1 litre
400g Caster Sugar
500ml Double Cream
500ml Milk
9 Egg Yolks
5 Amaretti Biscuits
Method
Place the sugar in a saucepan and put on the heat to caramelize you will need to watch the sugar and stir regularly so that it doesn’t burn. Once all the sugar has turned a golden colour and is a liquid consistency.
Add the cream and milk bring all to the boil ensuring all the sugar has dissolved.
Pass and cool, add the Amaretti biscuits and churn until set.
